UI Maps?

Can ui maps be modded on mac? Well at least to what degree can they be modded?

Yes, to the same extent as any other scenario map.
The ui.map file is a scenario with a camera track scripted to pan around the map environment. The Halo object you see is a piece of scenery (scen tag type) that is the centerpiece of the map. This scenario can be populated with other tags in order to change what you see on the loading screen.
Bitmaps.map and Sounds.map files are resource maps, not scenario maps. Resource maps are not opened with Eschaton or SwordEdit or any other 'mainstream' modding program, but with programs specialized for that, like the Halo Sound Injector Alpha. All these tools are available at
http://tools.halodemomods.com/ . Also, I should point out that most modders internalize their bitmaps so that they don't have to release huge bitmaps.map files with their mods. Internalizing bitmaps happens automatically in most cases with the latest version of Eschaton.

anyways, If you look into Ui with Eschaton. you can find under bitmaps tags that contain menu pictures ect.

You can give it a new BSP and new camera track and what not. Its very moddable but it takes a bit of patience.
