I was wondering how I could alter the model of master chief in halo demo. Also I want to change the model of the Assault rifle, and create a couple more weapons. Could anybody tell me how?

The current model extractors for mac halo do not extract models with bones, so even if you were able to extract and modify the Master Chief model, it wouldn't be animated. The only way to import models with bones is with tool.exe in Halo Custom Edition.

I don't care if it isn't animated, I just want to change the model around, I'll work on the bones when I get to more advanced modding. So I need to know how to change model the meta or xml file.

Even if you managed to get it out of halo, it is impossible to have it animated. no amount of experience with modelling will change that, unless you add it with custom edition.

I'm sure there's a much easier way with eschaton these days, but fonzie's modding pack (assuming it's still on the site) has a tutorial as well as the tools you need.

Well, here's another thing. It doesn't tell me how to change the models with blender, and I want to know how to import the models into blender.

So may questions, so little time.
MGM Isn't the place to learn about editing a Model, Go to Blender's forums, or Zbrush as well. They can help you way more then the people here can.
And before you ask, No I have no experience in Blender besides File expansion. I use Maya.

In Fonzie's Mod Pack, you will need to use OBJConverter. Read the included ReadMe file for a stepwise guide. There are no other mac tools that as of this post have been released that will allow you to import a fully-functional new model that has only been processed by a modeling program and saved as a model format like OBJ. The game engine handling models is too much depth for me to describe in a how-to, so just read that readme file included with OBJConverter. If you have the time and energy and a little bit of money, then I can refer you to the things you will need to do in order to get Halo Custom Edition running on your mac, which is an esoteric setup that allows you to do what you've asked to do with greater precision.
But tell me, do Blender and Wings3D allow you to adjust the weights of bone vertices?

Okay wait, how to I open the OBJ in Wings3D?
Please just answer this last question and I'm done.

In Wings3D, go under the File menu, and import the .obj file. You might also take the time to read any Quick-Start guides on how to use Wings3D or Blender. Although I have no real arguable reasons for this, I'd suggest trying Blender before Wings3D. They are both free, as far as I know.
Also, check out the tools page at HDM for more graphics applications:

I personally prefer wings for quick little model adjustments that are just some quick changes and blender for some more detail object changes. (I just prefer the interface on blender.)
